Soup to uplift the heart



I have a lot of beetroot in my veg box this week and so am making my most favourite soup! This is a recipe for Borscht taken from the book Recipes for Self Healing by Daverick Leggitt (a book I really recommend!). Beetroot nourishes the Blood and benefits the Liver and Heart. It is supported by the potato and carrot. The onion adds warmth and movement. The dill helps to digestion. The overall effect of this soup is to nourish the Blood and Qi and uplift the Heart.


Ingredients

1 small onion

1/2 pound beetroot

2 small potatoes

1 small carrot

2 pints vegetable stock

1 teaspoon dill

2 tablespoons cider vinegar

Yoghurt


Method

Finely chop the onion and fry it gently in a little oil until soft. Roughly chop all the other vegetables, add them to the onions and stir for a few minutes. Add the vegetable stock and let the soup cook for about 40 minutes.

Halfway through add the dill. When the soup is cooked liquidise it and stir in the cider vinegar. Add more vinegar to taste and more water if the soup is too thick. Serve with a swirl of yoghurt and garnish with parsley.
