I'm going to be making some super tasty and yet relatively healthy treats for my forthcoming Summer urban retreat half day later this week and have been trying out some new recipes. One that may make it onto the snacks menu are these lovely cacao, banana, date and cashew bars (recipe taken from the lovely Donna Hay Life in Balance cook book). For those who can't make it I thought I would share the recipe with you so you can try to make them at home.
Ingredients:
1/3 cup (35g) raw cacao powder
3/4 cup (180g) dates
1/4 cup (60ml) coconut oil
1 1/2 cups (240g) cashews
1 1/2 teaspoons vanilla extract
3/4 cup (200g) mashed banana (about 3 bananas)
coconut flakes, for sprinkling
Method:
Preheat oven to 160 degrees C. Line a 20cm square cake tin with non-stick baking paper and set aside. Place the cacao, date, oil, cashews, vanilla and banana in a food processor and process until smooth. Spoon the mixture into the prepared tin, spread evenly and sprinkle with coconut flakes. Bake in the oven for 40 minutes or until firm to touch. Allow to cool in the tin before slicing into bars. Store bars in an airtight container in the fridge for up to 1 week! Enjoy
